Our goal is to approximate the taste, texture and quality of Japanese Kobe Beef with a marble score of 6-7 or greater. To accomplish this we have attempted to emulate the Japanese finishing processes in terms of weight gain, harvest age, types of feed and days finished. When ready the animals are harvested at our farm in Bothell under USDA oversight. The carcasses then are taken to a USDA processing facility where they are dry aged for a minimum of 21 days.
We are proponents of sustainable farming and committed to breeding, finishing and harvesting our cattle in a natural and healthy environment.
Antibiotics are only used on our calves in life threatening situations. No hormones or animal by-products are fed to the animals.
